Legendary
wine begins in the vineyard. Red lava soil, steep hillsides, southern exposure
and sustainable farming all come together to create a unique expression of
Syrah.
WINEMAKING
Our syrah is handcrafted from our estate grown grapes in limited quantities.
Our site is south facing on a steep hilside with a 16% grade which captures
ideal sunlight throughout the day. It is densely planted with a syrah clone
from the Rhone Valley of Southern France. Vine yield is limited to encourage
production of dark, concentrated berries. The canopy is hand-groomed to
allow the fruit to mature and ripen evenly.
At harvest, when the berries look and taste just right
and the brix is perfect, we hand pick the clusters to ensure that only the
best are selected. The grapes are picked into smaller, half-ton bins so that
the berries are not crushed during the trip to the winery.
Our Syrah is produced and bottled at a custom winemaking facility. Depending
on the characteristics of the vintage, it is cellared in combinations of French,
American and Hungarian oak barrels for 18 months. Once bottled, our wine is
cellared a bit longer before release to develop more complexity.
